Improving Ecuadorian child nutrition by using mango by-products as potential sources of bioactive compounds

By-products from mango processing may serve as a source of pro-vitamin A with improved bioavailability after appropriate encapsulation and addition to a food matrix, as well as other bioactive compounds. This proposal is important because (i) it can contribute to the nutritional program for Ecuadorian children, (ii) it promotes the use of local products for food fortification, (iii) it promotes the use of sustainable extraction methods, (iv) it promotes the sustainable use of food by-products (waste does not exist), (v) new encapsulation methods designed for carotenoid release by intestinal microbiota of children will be developed, and (vi) it promotes research of other bioactive compounds in by-products.
